Green Gazpacho
Amazing for hot summertime days!
Ingredients
- 500 g cucumber
- 100 g babe spinach
- 1 avocado
- 2 boundary onions
- 1 light-green chili
- 2 garlic cloves
- 20 g basil
- 20 g parsley
- 2 tbsp olive oil
- 1 tbsp sherry vinegar
- 200 g plant-based sour cream
- 1/2 tsp salt
- juice of one-half a lime
Instructions
1. Cut cucumber lengthwise, take away seeds as well as cutting into pieces. 2. Cut avocado inwards half, take away pit as well as scoop out the avo flesh.3. Peel garlic. Remove the stalk as well as outer layer of the boundary onions. 4. Add all ingredients to a blender as well as mix until smooth! Add plenty H2O to larn a thick soupy consistency. 5. Garnish amongst chopped parsley as well as boundary onions.
